The steel is nitrided – a specialist heat treatment that hardens the surface and improves resistance to rust, wear, and acidic ingredients. It’s still carbon steel, just tougher, more forgiving, and a little more refined. It'll get better over time with seasoning, and we'll email you our video showing you how upon purchasing.
